Damaged starch analyzer Y41 is designed to determine the index of damaged starch in flour.
It is applied at mill factories, in the baking and confectionery industry.

The operation of the device is based on the amperometric method for the analysis of damaged starch in a flour sample. The device measures the amount of iodine absorbed by starch granules in a specially prepared suspension. For analysis, 1 g of flour is enough and about 7-10 minutes. Iodine is generated by a special sensor, absorption results are given as a percentage. The more iodine is absorbed, the more starch is damaged.
