Falling number device 2 KL is designed to measure the internationally standardized quantity – “Falling Number” – according to the Hagberg-Perten method.

Falling Number Index (FN) is a parameter that carries information about the activity of alpha-amylase in grain and flour (wheat and rye), which is activated during grain germination and affects the volume, porosity, color and other indicators of bread, bakery and flour confectionery.
The essence of the method for determining FN is based on the rapid gelatinization of a suspension of flour in a boiling water bath and on the further measurement of its liquefaction under the action of alpha-amylase.
