Dough testing device (analogue of an extensograph) Y03 is designed to determine quality of the dough by stretching the dough weighing 150 g with a special hook after 45, 90 and 135 minutes of proving.
It is used in mills, in bakery and confectionery industries.

The device consists of case, electric motor, dough rounding and forming system, thermostat, dough stretching system and integrated computer.
The device is controlled by a built-in PC with a touch screen and original software. All properties of the dough are measured, calculated and saved on PC. You can save files in PDF format. The device has a stepper motor. Dough forming device as well as stretching hook are controlled via the touch screen.
Indicators determined by the test analyzer (extensograph):
- Resistance to extension 5cm (R5)
- Maximum resistance to extension (Rmax)
- Extensibility (mm)
- Energy (cm2)
- Ratio number (resistance 5cm to extensibility)
- Ratio number (resistance max. to extensibility)
