Purpose and scope:

Laboratory dough mixer OlisLab 6100, a modernized version of the dough mixer TL-2, pin type, is designed for mechanized kneading of dough from crushed wheat (meal) and flour when determining the quantity and quality of gluten by manual washing.

With the help of the device, the process of kneading the dough is carried out due to the intensive mixing of the dough mass (flour with water) for 18 s using a stirring working body in the form of pins. It is used for kneading the dough in the manual method of washing gluten.

It is used at grain-receiving, grain processing, feed, oil extraction, bakery and other food enterprises, variety testing breeding stations, research laboratories and inspection companies.

Scope of application: for the standardized determination of gluten: in grain according to GOST 13586.1-68 “Grain. Methods for determining the quantity and quality of gluten in wheat” (canceled in Ukraine); in flour according to GOST 27839-88 “Wheat flour. Methods for determining the quantity and quality of gluten” (canceled in Ukraine); and for use in other methods according to domestic and international standards.

Description:

The device consists of a body, a kneading head, a drive, a bowl.

The principle of operation of the dough mixer is based on intensive kneading of the dough with the help of rotating pins at high speed. A sample of the product with water is placed in a barrel, mixed for a certain period (18 s), resulting in the formation of dough. At the end of kneading, the dough is removed from the bowl and sent to rest.
